I'd like to argue that metal with orchestral elements and traditional singing (traditional meaning the way it's been done for hundreds and perhaps thousands of years until the last few decades) is actually an improvement over the standard screeching guitars and ragged vocals, Manowar.

Besides, choirs are cool.

Please anybody dont be confused melodic metal is not the same thing as symphonic metal, melodic is like Dark Tranquillity and it is quite agressive just try to get those song of them:Away, delight, Away

Symphonic metal, Ulf? I've never heard the term until now. I'll have to adjust my usage; most people say "melodic metal." So, what would you call Therion? That's symphonic metal, I believe, according to the definition you just gave.

Yeah that song Die Motherfucker Die I know by heart. Thats the one, when I freak out in the disco ... ok... I freak out to many songs :P

Rhoedd, I know about Therion for long, and I've benn in metal scene for long too, and I can say there's no other band that mix up orchestration and melodic/doom(or even power) metal. It seems that most of the bands that follow orchestration fall in Black Metal (most of the bands are from Norway). Maybe one of the bands that is closer is Haggard. They have two albums, on Renaissance inspiration : And Thou Shall Trust... The Seer (1997) and Awakening the Centuries (2001).
Other bands with orchestration but not so deep in Black Metal are Theatre of Tragedy (Aegis and before) Tristania, Sins of Thy Beloved, Within Temptation (old one) and Sirenia. These bands are "romantic", so maybe your girlfriend will like it.
